<p class="wp-block-paragraph"><strong><span class="bold-blue">【あごだしとは】</span></strong><br>「あごだし」は飛び魚からとる出汁(だし)のことです。<br>九州では「飛び魚」のことを「あご」と呼んでおり、乾燥させて出汁に使用します。<br>あごだしは、上品でスッキリとした甘味があり、味が深く、だしの中でも高級品に位置づけられます。</p>

<p class="wp-block-paragraph"><strong><span class="bold-blue">【大根を茹でるときに米のとぎ汁で茹でるのはなぜ？】</span></strong><br>野菜から出たアクを包み込んで繊維の中に再び戻るのを防ぐためです。</p>



<ul class="wp-block-list">
<li>酵素の作用で組織が柔らかくなります。</li>



<li>デンプンが組織に浸み込んで、その粘りで形が崩れにくくなります。</li>



<li>糠の成分が大根のアクやえぐ味の成分を吸着して取り除きます。</li>
</ul>



<p class="wp-block-paragraph">ただし、酵素作用が加熱すると失われるため、とぎ汁は必ず低温の時点で加えておく必要がありますのでご注意ください。</p>

<p class="wp-block-paragraph"><strong>4.大根が柔らかくなってきたら、だしパックを取り出し、鶏もも肉と調味料を入れ煮詰めます。</strong></p>

<p class="wp-block-paragraph"><strong>【タッカルビとは】</strong><br>韓国の焼肉料理の一種で、鶏肉と野菜を使った家庭料理です。<br>「タッ」（닭）は鶏、「カルビ」（갈비）は「あばら骨」の意で「鶏のバラ肉料理」の意味です。<br>「ダッカルビ」とも表記されます。<br>鶏肉、キャベツ、タマネギ、さつまいも、ニンジンなどの野菜を甘辛いコチュジャン（唐辛子みそ）で炒めたものが一般的ですが、食べ方は各家庭においてさまざまで、ご飯を混ぜたり、インスタント麺、うどん、春雨といった麺類を入れたり、チーズをトッピングするなどアレンジ度の高い料理です。</p>

<ol class="wp-block-list"><li>サラダ油をひいたフライパンで、鶏もも肉、たまねぎをかるく炒めます。</li><li>1.の具材に火が通ってきたら、キムチを入れ、弱火で置きます。</li><li>味付けの調味料を入れ絡めます。</li><li>最後にチーズを入れ、弱火で3分程度蒸して完成です。</li></ol>
